Hello my veggie loving friends! I hope you are all having a lovely week. We have beautiful weather here in my neck of the woods. We definatly need more rain, and I think we will get it, but while the sunshine is here I will take advantage. Going on a nice little hike and a picnic today, so I need to pack up a quick and easy picnic lunch to enjoy in the spring-like sunshine. One of my go to easy and delicious lunches is Chickpea Salad Sandwiches. Chickpea Salad Sandwiches are delicious, versatile, and super simple to make.
Just smash up some chickpeas and add a bunch of your favorite veggies, and some spices, and you will have a yummy chickpea salad you can throw on sandwich bread, baguette or my personal favorite, pita bread.
My Chickpea Salad recipe is always a little different depending on what I have in my fridge that day.
My favorite seasonings are garlic, cumin, and Trader Joes 21 seasoning solute, which is just an all purpose mix.
I like to add some good mustard for some tangyness and some fresh crisp veggies for some crunch.
My absolute favorite mustard of all time are the Sierra Nevada Mustard
. They are so so good. I could eat them with a spoon (and sometimes do)
They are made by the Sierra Nevada Brewing Company and they have a variety of flavors that include Porter, Stout, and Pale Ale Honey Mustard. The Pale Ale is not vegan because of the honey, so check out the others if you don’t eat honey. They are local for me, but you can find them online here.
I have used the Porter mustard to make my Vegan Beer Cheese. OMG good!
I love to put my chickpea salad on a soft warm pita over some mixed greens, and top with some tomatoes and avocado.
You can of course use dried chickpeas and cook them yourself rather than canned.
I like to smash up half of the chickpeas so the salad is still pretty chunky.
Don’t like vegan mayo? That’s OK, leave it out. Add a little of your favorite creamy salad dressing!
Change up the spices and the veggies however you like. Sometimes I put pickles, or pesto, or radishes, or a squeeze of lemon. The variety are endless.
- 1 Can Chickpeas,drained and rinsed.
- ¼ Cup Cucumber diced small
- ¼ Cup Red Bell Pepper diced small
- ½ Medium Red onion finely diced
- 2 Tbs Of your Favorite Mustard. My favorite is Sierra Nevada Porter
- 1 Tbs Vegan Mayo
- 1 Tbs Cumin
- 1 Tsp Garlic Powder
- 1 Heaping tsp Trader Joes 21 seasoning solute or any mixed seasoning
- Salt and Pepper to taste
- Lettuce, tomato, and avocado for Sandwich
- In a medium sized bowl, smash half the chickpeas with a fork.
- Add all ingredient and mix well.
- Serve on your favorite bread or pita with greens, tomatoes, and avocado!
Make it, eat it, enjoy!
