Hi guys! I’m here today with one of my favorite foods, hummus! Oh, and beets! I looooooove beets! The earthy sweet taste, the beautiful color, oh yeah baby! This a nice healthy hummus recipe. I have left out the oil, and it only takes 6 ingredients, including spices! One of the things I love about hummus is it’s versatility. You can add whatever flavor you like for endless combinations. I hope you love this recipe as much as I do! (Hummus makes me uncontrollable with exclamation points).I finally invested in a Vitamix Blender and I’m so excited for everything I’m going to do with it. I really love beets. Boiled, roasted, pickled, or raw, beets are my jam. Adding roasted beets to chickpeas gives you a hummus that is a little earthy, and a little sweet, and oh so creamy good.
My sister and I once went beet picking on an organic farm, and we dug up what I’m pretty sure was the biggest beet ever. That baby weighed in at 6 pounds and we were pretty proud of it. I think I made like 10 jars of picked beets out of it!
This Roasted Beet Hummus is fresh, simple, and delicious.
It is oil free, and doesn’t include any expensive ingredients. Well, except for a few pine nuts, but its just a few.
This Roasted Beet Hummus is loaded with protein, fiber, and vitamin C.
Dip your favorite veg, bread, or chips in this beautiful dip, or use as a sandwich spread!
I was excited to use my Vitamix to make this recipe, and it did not disappoint. If you don’t have one, a food processor works great as well.
No pine nuts? Leave out or sub walnuts or cashews.
- 1 Large Beet
- 1 Can Chickpeas
- Juice of 1 Small Lemon
- 1 Tsp Cumin
- 3 Cloves Garlic
- ¼ Cup Pine Nuts plus a few for topping.
- Salt and Pepper to taste
- Preheat oven to 400 degrees
- Slice beet in half and lay cut side down on a baking pan.
- Roast for 20 minutes or until beet is fork tender.
- Let cool enough to handle, then remove skin.
- Discard about half the chickpea liquid and add the chickpeas and remaining liquid to a high powered blender or food processor.
- Add all the ingredients.
- Blend until smooth! Add water if it needs to be thinned.
- Salt and Pepper to taste.
- Top with more pine nuts.
Make it, eat it, enjoy!
