Hey guys! I am here today with a breakfast recipe for you. “They” say breakfast is supposed to be the most important meal of the day. I’m guessing that my sometimes brownie-with-a-cup-of-coffee breakfast is not really what “they” are talking about. Although dessert for breakfast has its own merits in my opinion (these sure make my day better), I know that we should be starting our day with nourishing, healthy foods, that will feed our body and our minds. Oatmeal is a popular choice as a healthy breakfast option. But I’m not having any boring old oatmeal mush at my house. That just isn’t for me. Want to bring your oatmeal to another level? Well, spelt berries are the way to do that!
After discovering how amazing spelt berries are when mixed with your average oats, I will never eat plain oats again!
Spelt is a chewy, nutty, grain that has been cultivated since ancient times. The grains are about the size of orzo pasta, a bit bigger than rice.
Spelt is great in soups, salads, and hot breakfasts. Its good pretty much any where you would use rice or barley, in sweet or savory dishes.
Check out this Spelt Berry Greek Salad I recently made.
Spelt is high in protein and fiber.
I really love it added to oatmeal because it gives the oatmeal a great chewiness and heartiness that I thing plain oats lack for me.
My favorite brand is Bob’s Red Mill Organic Spelt Berries.
To cook spelt berries, combine 1 cup spelt berries and 3 cups water. Bring to a boil, then simmer for 30 to 40 minutes or until berries are al dente. I make a batch and keep it in the fridge for breakfast, topping salads, or adding to my dinner meals.
I sweetened this porridge with just a little pure maple syrup, topped with some granola and fruit, and sprinkled a little cinnamon! Yum!
Top with your favorite fruits, granola, or nuts!
- 1 Cup Cooked Spelt Berries
- 1 Cup Rolled Oats
- 1¼ Cups Almond Milk
- ¼ Cup Raisins
- 2 or 3 Tbs Pure Maple Syrup
- Place oats, raisins, and almond milk in medium pot. Bring to a boil. Turn to medium low simmer and cook until oats are tender.
- Add Spelt berries and maple syrup and mix.
- Serve topped with granola, bananas and any other favorite toppings!
